The culinary inspiration of Euphemia Haye are Chef Raymond Arpke and his wife D’Arcy. Everything from breads, to dressings, stocks, soups and desserts are made in-house. The renowned Chef Arpke, who is co-owner and cookbook author intertwines his classical training, innovation and a taste for freshness to consistently dish out fabulous global and American fare. The carefully selected a la carte menu at Euphemia offers local, fresh, and creative food for everyone and that includes vegetarian diners and health-conscious dining patrons as well.

Some of the original dishes at this uniquely classical restaurant are Crisp Roast Duckling accompanied by bread stuffing, the ever-popular flambéed Prime Peppered Steak, and fresh berry sauce. Another popular item on the menu is the Caesar salad made to order. Also available at request is fresh seafood, vegetarian dishes, and homemade pasta. On the night menu, specials like Sweetbread and Veal are also regulars.

The Haye Loft also offers a special sandwich of the day, its popular duck, and the seafood special of the day, each evening.

The establishment opened in 1975 and soon after the Arpkes purchased the restaurant from its founder Leslie Buntin. The restaurant takes the name of Buntin's grandmother. Well known for its warm and friendly ambience and outstanding service, Euphemia has received an enthusiastic welcome from Longboat Key residents and from vacationers and travelers to the area.

Initially, the restaurant had seating for just 28 guests. And Euphemia's cuisine has maintained its standards while continuing to add its unique touch to the menu - the tradition of combining international and contemporary cuisine, reflecting the chef’s creativity continues to be the signature behind the success of this authentically American restaurant.

Euphemia has won several awards and has been recognized widely for its culinary expertise. Another coveted award that has gone to Euphemia Haye for the last 10 years is the Sarasota Golden Spoon Restaurant by Florida Trend Magazine - it has also been inducted into the Golden Spoon Hall of Fame. The restaurant has also been recognized by the James Beard Foundation, a top honor for chefs and restaurant professionals.
